A Guilty Pleasure

I have found myself watching comedians on the Dry Bar Comedy channel that comes with my HDTV. I love to laugh, but when you’ve seen all of your movies multiple times, it doesn’t lead to much laughter.

Dry Bar Comedy, however, is usually fresh. I don’t watch enough to see every comedian, so it stays fresh. I love comedy and if they comedians are clean, so much the better. I don’t care for profanity or dirty jokes, which makes this perfect for me!

Do you like comedy?

There’s nothing like tuning in after a not so great day, to laugh yourself silly at clean comedy! So, that, my friends, is my guilty pleasure confession for today! What’s your guilty pleasure?

It Was Almost

Why can’t honoring the Savior be this simple?

It was almost Christmas

It was almost Mass

It was almost the happiest time of the year

It was almost a dream come true

It was almost the fulfillment of so many dreams

It was almost real

It was almost like my heart never broke

It was almost as if someone actually cared

It was almost

But it wasn’t.

He came to save us all; a tiny babe to save the world.

But then it was, because it doesn’t matter what people do or don’t do. Jesus came to save us. Politics are just that. Jesus is what matters and He will never fail me!

In the Bleak Midwinter…Car Stuff

Need traction? Yup. Need sand!

Ok. Odd title. However, if you’ve been following me for a while, you know that I suffer from “BSOS” or “Bright Shiney Object Syndrome” aka ADHD. So…it came to my attention the other day and I was reminded of it today, that some people don’t know what to do in a Midwestern winter. That got me thinking…maybe I should do an advice post for all of you gf travel-loving Midwesterners. Here it is!

Tip #1: Put a Bag of Sand in Your Trunk

Now why would you do this? Well, if you drive a little four cylinder car like I do, you know that it’s basically a roller skate. Mmmmhmmmm…your driving a car small enough to strap to your foot. Not really, and absolutely no offense to people who drive small cars! I do too and I love it! My gas mileage is excellent and it fits us perfectly well. I have no wish for a bigger vehicle. However, if you’ve driven one of these puppies in the snow, you know that there is little to no traction, even with good tires. The problem is that the car doesn’t weigh enough to hold it down on the road, hence the sliding into curbs, etc. in the snow.

To prevent this, all one needs to do is have a 70 pound bag of sand popped into the trunk. The extra weight weighs down the car, and voila! No more slippy-slidey! (Or may I suggest a mouthy teenager? JK!!!) I couldn’t help myself! 😉Wonderful! You may also use cat litter, or water softener salt. The best part about using sand or kitty litter, is that if you get stuck, you may use some of it for traction by putting part of the sand or litter under your tires. If you do opt for the surly teenager, they could help dig you out if you also put in a shovel!

Tip #2 Have Your Lights On!

I can’t think of a better way to tell you this! Just because you can see to drive, DOES NOT mean that other drivers can see you!!!! Stop being selfish. This is not about you (as in whether you can see to drive!) This is about whether we can see you in that dense fog, or even just the greyness of a winter morning! So, unless the sun is brightly shining so that you can’t drive without sunglasses, please put on your lights! Isn’t it better to be safe and seen than killed and unseen?

Tip #3 Always have a Blanket!

So, let’s say that you forgot the sand/litter/salt that you were supposed to buy to put in the back of your economy car. Now, you have slid off the road and into a ditch. You will need help getting out, and you have called for it. However, it’s a busy time of year, and the rescue wreckers are otherwise occupied. You might be in for a long wait. If your car is not operational, you could get cold quickly. The best solution? Have a warm blanket at the ready. Your body heat paired with your warm blanket and being inside your car away from the wind, could keep you cozy and warm instead of shivering while you wait for help.

Tip #4: Snacks, Anyone?

You might want to consider keeping some small packages of nuts, dried fruit or the like in your little car. These could keep you from wasting away, or feeling faint as you wait for help. You’ll also be in a much better place when help does arrive. No one is going to want to see you stranded and cranky!!!

That’s all I can think of for now! Stay safe out there, and if it’s really bad, the best advice is to just stay home!

God bless you all and have a happy and safe holiday!

A Burger Upgrade

This was the biscuit mix I used to make the buns.

This evening I was making some burgers for dinner.  What can I say, I found three packages for clearance 50% off, so one for dinner, and two into the freezer for another two meals.  Score!

Anyway, I had this idea to take a package of our favorite cheddar garlic biscuits and make them into hamburger buns.  I just made them like normal, but added the spices you’re supposed to add to butter to pour over said biscuits, into the mix. Also, I put in a cup of sharp cheddar cheese, not the 1/2 cup for which is called. I shaped out four buns and baked them for 21 minutes in a 425° oven.  They were perfect!

I let the buns cool slightly and then sliced them open for the burgers, which I had cooked over a large, thinly sliced onion.  The onions caramelized and I stacked the hamburger, onions and a slice of extra sharp cheddar cheese on the biscuit – bun and closed the other half over it.  I would show you pictures, but I couldn’t find my phone to take them and the meal was eaten quickly.  Everyone agreed the burgers were awesome!  Yay!  Score one for mom!

Yeah, it actually looked much better than this!

The Most Wonderful Pie of the Year

Mmmmmmmmmmmm!

Well, technically, it’s a tart! At Thanksgiving this year, I was trying to find a new and different pie recipe. I settled on combining sweet cherries (I used the frozen kind!) and cranberries. It was not only beautiful, but extremely tasty! Here is my recipe:

1, 9″ pie crust (you may make your own, but in my case, I chose to go the easy route by purchasing frozen gf 9″ pie crust. Cook according to package instructions.

2 cups quartered sweet cherries (at least partially defrosted if using frozen!) Measure after cutting.

2 cups rinsed, halved cranberries. Measure after cutting.

1 cup sugar

1 tsp. salt

1/2 cup water

7 Tbsp. corn starch

In a large saucepan, place cherries, cranberries, sugar, and salt. Cook over medium heat, stirring frequently until fruit starts to break down. In a separate measuring cup, measure the water and add the cornstarch to it. Stir until the starch dissolves and add it to the fruit mixture. Cook for five minutes, stirring constantly, and remove from heat.

Pour hot pie filling into the baked crust and let cool to firm up the pie filling before serving. Enjoy!

Letting Go

I thought I had let go

A long time ago

I let go of the pain

I let go of the sorrow

Even I let go of the joy

But not real joy

Only a facade

We played a good part

You and I

We fooled them all

What fools we were

Or maybe just I

Bought into it

Saw it as truth

Facades, facades!

All my life was facades

Sit still

Smile

Never cry

Never feel

Groomed for but to always go on.

Finally Done???

Nope. Now I have to put away and donate!!!

I start with the view from my couch/bed. Sad, and yet so happy to have gotten the storage unit cleared out!! Woohoo 🎉!!! Celebration! Well, yes, except that I’m too pooped to party. Yeah.. it’s been a looooooong day. I drove over 100 miles in a moving truck and carted boxes, bags, furniture, you name it.

Therefore, this post will be mercifully short! Why? Yeah…see the above reason I’m not partying! Thank you so much for your prayers for me and my family. I don’t think I could have made it without you!

Right now I am choosing to be kind to myself and just relax, while reading the book of Tobit in my Bible. I love that one! Probably because it features St. Raphael the archangel. It’s such a cool story. Anyway, I digress…take a bit of time for yourself, read your Bible, and relax in the knowledge that God has this…all of this…and that I’m praying for you, my friends!

Blessings,

Rita
