
Well, technically, it’s a tart! At Thanksgiving this year, I was trying to find a new and different pie recipe. I settled on combining sweet cherries (I used the frozen kind!) and cranberries. It was not only beautiful, but extremely tasty! Here is my recipe:
1, 9″ pie crust (you may make your own, but in my case, I chose to go the easy route by purchasing frozen gf 9″ pie crust. Cook according to package instructions.
2 cups quartered sweet cherries (at least partially defrosted if using frozen!) Measure after cutting.
2 cups rinsed, halved cranberries. Measure after cutting.
1 cup sugar
1 tsp. salt
1/2 cup water
7 Tbsp. corn starch
In a large saucepan, place cherries, cranberries, sugar, and salt. Cook over medium heat, stirring frequently until fruit starts to break down. In a separate measuring cup, measure the water and add the cornstarch to it. Stir until the starch dissolves and add it to the fruit mixture. Cook for five minutes, stirring constantly, and remove from heat.
Pour hot pie filling into the baked crust and let cool to firm up the pie filling before serving. Enjoy!
