
Our family loves pico de gallo! What is that? Well, for the uninitiated, it’s a type of fresh salsa. It’s delicious! Only trouble is that it’s expensive. Especially when you have four people who absolutely love it eating it out of the tiny containers that are sometimes clearanced at our local Woodman’s for 99ยข!
The good news is that it’s easy to make, especially when it’s all hands on deck! Each of us did a little bit and we got a huge bowl of pico! Yum! Here is what we used:
Five large, ripe tomatoes
1 large jalapeno pepper
2 large onions
1 bunch of cilantro (doing this again, I’d use 1/2!)
1 tsp. minced garlic
1 1/2 tsp. salt
1 lime
Here’s what we did:
I chopped the tomatoes into a small dice and added them to our big, red bowl. (Your bowl does not have to be red, but it could be! ๐)
Next, Child #4 took the onion quarters that I had prepared for her and put them in our nut chopper to get a fine dice. I couldn’t find our mini chopper machine to do this quicker, so the nut chopper worked and she and her twin had fun pushing the handle down (over and over again!) to get the small dice we needed! She also added it to the red bowl in increments, as it was done.

Child #2 handled the jalapeno, as she loves spicy food and isn’t freaked out that she’s going to put her hand near her eye and irritate the broken blood vessel in it. (Nope. That would be me!) She cut out the seeds and ribs (as we don’t all love spice as much as she does!) and finely diced the pepper, adding it to the red bowl.

Child #3 juiced the lime I had cut in half for him into our small, juicing cup with a tip on it for fitting into said lime.

Children #’s 3 & 4 chopped the cilantro finely and added it to the bowl. As I said above, if I were to make this again, I would use about half of the bundle of cilantro, as it was a bit much, but since we like the herb, it was fine.

I added the minced garlic (out of the jar I keep in the fridge, since Sam’s does a great job of mincing, and then I don’t have to!) and salt. I stirred and then added the lime juice with a final stir, making sure to do a thorough job!
We served it with tortilla chips. I prefer a lower-salt variety than the kiddos, but use whichever you prefer. You may also adjust the salt in the recipe if you are in need of something with lower/no salt. Maybe try using a salt substitute.
