
This evening of boy scout day, we made an old scout favorite – beef packets. Now, usually these are cooked in the coals of a campfire. However, since it’s February and I have not a campfire to be found, I cooked them in the oven. Here is what I did:
Four, 1/2 lb. lean ground beef patties
3 large potatoes, peeled and sliced into 1/4 inch slices
1, 10 inch zucchini, peeled and sliced into 3/4 inch slices
1, 10 inch yellow squash, peeled and sliced into 3/4 inch slices
1 large sweet onion, quartered and sliced
12 Tbsp. butter
In four separate pieces of foil, sprayed with your favorite cooking spray place each burger patty. Separate the the onions, zucchini, potatoes, and yellow squash into four piles and distribute equally between the packets.
Add three Tbsp. of butter to each packet. Sprinkle liberally with salt and pepper. Seal the packets thoroughly and place on a jelly roll pan, in case of leakage.

Bake for 1 hour at 350° F. Open packets carefully so as not to be scalded. Enjoy.
