
Ah, Lent! That wonderful time of year where we are searching for meat-free recipes! Actually, many times people opt to eat meat-free.
One of our favorite meals during this time of sacrifice is grilled cheese and tomato soup. Wait, you say! I thought you’d given up dairy. Yes, my dear readers, but there are other options out there.
For example, one could substitute dairy-free cheese for regular cheese on their grilled cheese sandwich and, add my favorite tomato soup. Yum!
So, here is what you need:
1, 15 oz. can of tomato sauce
2 cups of your favorite, unsweetened, dairy-free milk
1/2 cup of your favorite salsa
Combine all ingredients in a large saucepan and slowly bring up the heat until all ingredients are warmed to taste, stirring gently. Enjoy!
